The recipe for this extremely nutritious and tasty finger millet dosa is shared by Durga Chellaram, who is a renowned food technologist. INGREDIENTS
- 1 cup finger millet powder
- ¼ cup rice flour
- 2 tsp chopped green chillies
- 1/3rd of a cup of thick sour curd
- 1 ½ cups water
- Salt as required
- 1 small onion (finely chopped)
- 1 tbsp finely chopped coriander leaves
- 1 tsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 5 curry leaves
- 1 tsp oil
INSTRUCTION
- Blend the millet powder, rice flour, chopped green chillies, curd, water and salt in a mixer jar
- Pour the batter into a bowl and keep aside for at least 30-45 minutes
- Into it, add chopped onion and coriander leaves
- Heat oil in a pan
- Splutter mustard seeds
- Roast cumin seeds and chopped curry leaves
- Pour this tempering into the batter
- Mix it into a loose batter
- Grease a hot pan with some oil
- Pour a ladle full of batter
- Spread into thin crepe; you need not use a ladle to spread the batter as it is loose
- Sprinkle a teaspoon of oil on the dosa
- Flip and cook until the dosa is crispy
- Serve the hot millet dosa with ‘gun powder’ (chutney powder) mixed in fresh ghee or coconut chutney.
