Forget expensive pizzas and complicated recipes! This “Better Than Pizza” Potato Pastry is not only incredibly delicious but also incredibly easy to make with simple ingredients readily available in your kitchen.

Ingredients

For the Pastry:

  • 3 large potatoes (about 500g)
  • 1 onion, finely chopped
  • 1 carrot, julienned
  • 1 capsicum, thinly sliced
  • Salt and black pepper to taste
  • 1/2 bunch green onions, chopped
  • 3 eggs
  • 250ml milk
  • 200g all-purpose flour
  • 1 teaspoon baking powder
  • 150g cheddar cheese, grated

For the Yogurt Sauce:

  • 1 small carrot, grated
  • 2 tablespoons olive oil
  • 1 cup plain yogurt
  • Pinch of dill
  • 2 cloves garlic, minced
  • Salt to taste

Instructions

  1. Prep the Potatoes: Julienne the potatoes using a julienne peeler or grater. Soak them in water for 15 minutes to remove excess starch. Drain and set aside.
  2. Sauté the Veggies: Heat oil in a pan and sauté the onion until softened. Add the carrot and capsicum, cook for 2-3 minutes. Season with salt and pepper.
  3. Combine Everything: In a large bowl, combine the drained potatoes, cooked veggies, green onions, eggs, milk, flour, baking powder, and half the grated cheddar cheese. Mix well until everything is incorporated.
  4. Bake the Pastry: Preheat oven to 180°C (350°F). Grease a baking tray and pour the batter into it. Spread evenly and bake for 40-45 minutes.
  5. Make the Sauce: While the pastry bakes, heat olive oil in a pan and sauté the grated carrot until softened. Add the yogurt, dill, garlic, and salt. Mix well and set aside.
  6. Finish and Serve: After baking, sprinkle the remaining cheddar cheese on top of the pastry. Return to the oven and bake for another 10 minutes. Let the pastry cool slightly before cutting and serving. Enjoy with the yogurt sauce for a delightful flavor combination!
