This Vegan Peanut Butter Chocolate Chip Blondies Recipe is gluten free, egg free, dairy free and so easy to make. These blondies are soft, chewy and delicious and are full of chocolate and peanut butter!

How to Make this Recipe


EQUIPMENT

  • 1 Large Mixing Bowl
  • 1 Small Mixing Bowl
  • 1 8×8 Square Baking Pan
  • 1 Rubber Spatula
  • Measuring Cups and Spoons
  • Parchment Paper

INGREDIENTS

  • 2 tablespoon Ground Flax
  • ½ Cup Non-Dairy Milk I used oat milk, but any non-dairy milk will work
  • 1 teaspoon Vanilla Extract
  • 1 Cup Creamy Natural Peanut Butter
  • ¾ Cup Light Brown Sugar, tightly packed
  • 1 ¼ Cups Homemade Oat Flour See note
  • 1 ½ tsp Baking Powder
  • ½ teaspoon Kosher Salt
  • 1 ½ Cups Chocolate Chips or Chopped Chocolate, divided I used a combination

INSTRUCTIONS

  1. Preheat oven to 350*. Prepare a 8×8 baking pan by greasing it with coconut oil and inserting a parchment sling.
  2. In a small bowl, combine the flax, non-dairy milk and vanilla. Stir to combine and set aside.
  3. 2 tablespoon Ground Flax,½ Cup Non-Dairy Milk,1 teaspoon Vanilla Extract
  4. In a large bowl using a rubber spatula, stir the peanut butter and brown sugar together.
  5. 1 Cup Creamy Natural Peanut Butter,¾ Cup Light Brown Sugar, tightly packed
  6. Add the flax mixture into the peanut butter mixture and stir well.
  7. Add homemade oat flour, baking powder and salt into the bowl and stir to combine. The mixture will be really thick here!
  8. 1 ¼ Cups Homemade Oat Flour,1 ½ teaspoon Baking Powder,½ teaspoon Kosher Salt
  9. Next add 1 cup of the chocolate chips and stir to distribute.
  10. 1 ½ Cups Chocolate Chips or Chopped Chocolate, divided
  11. Scrape batter into a prepared baking pan and spread evenly with a spatula.
  12. Top with the remaining ½ cup of chocolate chip and press them into the batter.
  13. Bake in a 350* oven for 28-31 minutes, turning the pan halfway through. They are done when the edges are golden brown.
  14. Let cool completely before cutting and serving!

RECIPE’S NOTES


To make homemade oat flour, blend about 1 ½ cups gluten free rolled oats in your blender until they turn into flour. Then measure out 1 ¼ cups and proceed with the recipe.
To store: place the blondies in an airtight container and keep at room temperature for up to 4 days. Or freeze for up to a month.
