Ingredients

  1. Sweet potato – 250g (after cooked)
  2. 3 eggs
  3. Yogurt (less watery)
  4. Sugar
  5. Salt

Instructions

Prepare the Sweet Potatoes:

  1. Begin by washing and cutting the sweet potatoes into chunks.
  2. Steam the sweet potatoes or cook them in the microwave with 100ml of water for approximately 6.5 minutes (adjust the time as needed).
  3. Once cooked, remove any excess water and peel off the skin. Add a pinch of salt for flavor.

Prepare the Batter:

  1. Mash the cooked sweet potatoes until they reach a soft consistency, ensuring they do not contain excess water.
  2. Measure out approximately 85g of yogurt, making sure it is not too watery.
  3. Separate the egg whites and yolks. Place the egg whites in a large bowl and add the egg yolks to the sweet potatoes.
  4. Mix the egg yolks with the sweet potatoes until the mixture turns a cute yellow color.

Make the Meringue:

  1. Beat the egg whites until they form soft peaks.
  2. Gradually add 1 tablespoon of sugar three times (total 3 tablespoons) while continuing to beat until a perfect meringue forms.

Combine the Ingredients:

  1. Divide the sweet potato mixture into 3-4 portions and gently fold them into the meringue, ensuring the mixture becomes a pretty yellow color.

Prepare the Microwave Bowl:

  1. Cut out parchment paper to fit the bottom of the microwave-safe bowl.
  2. Melt 2/3 tablespoon of butter or cooking oil in the microwave and brush it onto the bowl. Place the parchment paper at the bottom.

Microwave Cooking:

  1. Pour the sweet potato batter into the prepared bowl and evenly distribute it with chopsticks.
  2. Microwave the cake for 6 minutes, adjusting the time if necessary. Be careful not to overcook to maintain the cake’s fluffy texture.

Final Touches:

  1. Once cooked, insert a toothpick into the center of the cake. If it comes out clean, the cake is done.
  2. Place a plate over the bowl and carefully flip it to release the cake onto the plate.
  3. Dust the cake with powdered sugar while it’s still warm to create a sweet, candy-like coating.
