Ingredients

  • 5 small potatoes, peeled and sliced thin
  • 1 1/2 lbs ground beef
  • 1 small onion, diced
  • 1 10.5 ounce can cream of mushroom soup or 1 1/2 cups of homemade cream of mushroom soup
  • 1 cup milk
  • salt and pepper to taste
  • 1/4 teaspoon cayenne pepper, optional
  • 1 1/2 cups shredded Cheddar cheese

Instructions

  1. Spray your slow cooker with non-stick cooking spray.
  2. In a large skillet, brown your ground beef and onions. drain and place 1/2 of the mixture in the slow cooker.
  3. Add 1/2 of the sliced potatoes on top of the beef mixture.
  4. In a mixing bowl, combine cream of mushroom soup, milk, salt, and pepper(s) to taste. Mix well and add 1/2 of the mixture to the slow cooker on top of the potatoes.
  5. Sprinkle 1/2 of the shredded cheese on top.
  6. Repeat the layers of ground beef, potatoes, sauce, and cheese.
  7. Cover and cook on high for 3-4 hours or until the potatoes are tender.
  8. Before serving, turn off the crock pot and let sit for 15 minutes to allow the casserole to thicken before serving.
