  • 500 grams (17.6 oz) uncooked rice
  • 10 red dates, pitted and chopped
  • 1/4 cup raisins
  • 1 tablespoon flour
  • 1/4 cup dried cranberries
  • 1/4 cup peanuts, roughly chopped
  • 50 grams (1.7 oz) butter
  • 100 grams (3.5 oz) water
  • 60 grams (2.1 oz) sugar
  • 1 tablespoon honey
  • Sesame seeds, for garnish
  • Butter paper

Instructions

  1. Prepare the rice: Rinse the rice thoroughly in several changes of water until the water runs clear.
  2. Clean and soak the dried fruits: Rinse the dates and raisins. Pit the dates and roughly chop them. Soak the raisins in warm water for about 10 minutes to plump them up.
  3. Coat the rice in flour: In a large bowl, mix the rinsed rice with the flour. This step helps absorb excess moisture and create a crispier texture.
  4. Fry the rice: Heat the butter in a large saucepan over high heat. Once melted, add the rice and fry for a quick 5 seconds. This step helps seal the grains and prevent them from becoming mushy. Remove the rice immediately and drain on paper towels.
  5. Make the sugar syrup: Combine the water and sugar in a saucepan. Bring to a boil, then reduce heat and simmer until the sugar dissolves and the syrup becomes slightly thick and golden, about 5 minutes. Stir in the honey.
